Hello! I’m Amanda Arroyo and I am a Nutrition and Wellness Consultant, certified by AFPA. I became a Nutrition Consultant because I have always been interested in nutrition from a young age because of various food allergies. This blog is to share healthy lifestyle tips, knowledge, and a few of my favorite recipes.
As a Consultant, I can help you with your nutrition goals so you can be the best you. Although we are all similar in many ways with our needs nutritionally, we can also be individual when it comes to our approach. Likes and dislikes, food allergies, goals, and different health concerns differ from each individual. Each person has their own “Different Beet”.

My Approach
Simple Education
Nutrition is something I’m passionate about, but I know it’s not the same for everyone. A basic understanding of health I believe is something everyone should have. Nutrition does not have to be complicated. Being able to help people gain a healthy relationship with food is something that makes me happy.
Individuality
I believe the best care is individualized. It seems like more than ever, people have a wide range of food allergies, sensitivities, and goals. Getting enough nutrients can seem difficult and overwhelming. Although we all need the same nutrients, there is a variety of ways to get them, and a variety of ways that can be healthy.
So which way is best for you?
Nutrient Dense and Whole Foods
Whatever you are eating, or not eating, having meals throughout the day that are full of nutrient dense foods is the way to go. You want to be able to fuel your body with the nutrients it needs to continue to work properly and to preform the best it can. That way you can feel the best that you can.
Differing Diets
Specifically I have a place in my heart for families that have differing diets. With my family needing to find separate recipes and meals that I could have along with the family because of food allergies, was a headache at first. But, I am very grateful to have had parents that were dedicated and talented to be able to find a balance and be able to feed our family healthy meals, no matter the restrictions. It’s a lot of research and a lot to learn.
I can take part of the headache that comes with educating and feeding your family’s needs away by educating and finding what works best for the family. Not only individually, but also each family has their own specific “beet” when it comes to their meals, and I want to help you find that beat so meal time is not a headache.
My Recipes
The recipes I post here are ones that I make at home that follow my beat, being a vegetarian and allergic to dairy. I am not promoting a vegetarian diet, but sharing what we cook at home.
You can visit My Story page to read about my relationship with food, my food allergies, why nutrition has always been of interest to me, and why I’ve chosen to continue a whole food vegetarian lifestyle.
